Yogurt Powder

We recently came across a source for yogurt powder. I wasn’t sure how it was going to work or taste but it sounded pretty interesting so we got some to try out. Delicious!

Let me warn you, first off. This is not a mix with water and get yogurt on the trail kind of powder. But it is a great powder to mix into smoothies or sauces calling for yogurt. It has a delicious sweet, tangy flavor, exactly what you would expect of a high quality, flavorful yogurt.

Camp Cranberry Sauce

Cranberry sauce, to me, is one of the most important components of the Thanksgiving meal and I just couldn’t imagine turkey-day without it. We whipped up a quick and easy cranberry sauce using dehydrated cranberries that works really well on the trail.

Here’s what you’ll need: Combine all ingredients in a small pot and bring to a boil. Reduce heat and simmer for about 8 minutes or until the cranberries start looking a little saucy (Note: it will appear somewhat soupy, but will thicken once cooled). Eat warm or allow to cool for a thicker sauce.

Makes: ¼ cup cranberry sauce

Turkey-Day Features

In honor of turkey month we felt we had to include freeze-dried diced turkey as one of our featured products for November! This turkey is a fabulous addition to soups and stuffings, and rehydrates quickly in camp cooking. What goes better with a turkey dinner than cranberries? Ours are slightly sweetened but still have a delightful tartness to them. Boil them in a little bit of water for a quick and easy sauce or eat them on the side to get the flavors of cranberry sauce with your meal.


Corn is a traditional side dish at Thanksgiving going all the way back to the very first celebration. Our freeze-dried corn makes a simple and easy side-dish on it’s own or my favorite – mixed in with the mashed potatoes!

Powdered Milk & Eggs

Powdered milk and eggs both have a checkered past, but there seems to be a few new options available lately that taste pretty good. My new favorites are:

Milk

Nature’s First – This is my hands down favorite powdered milk. It’s a full cream milk with the simplest of ingredient lists. Milk. The downside is that because it doesn’t include any additives it can be a little more work to get it to fully dissolve. Now don't get me wrong . . . it's not one of those nasty "clumpers," it's just not an instant dissolve. If I’m eating anything where milk plays a big part (smoothies, granola, etc) this is the one I reach for first.
BTW - They also make a great coffee creamer!


Nido - My favorite instant milk powder and my current backup, Nido is a great tasting choice! Although you might not find it on your traditional grocery shelf, you can get it in most Asian and Latino grocery stores in a small or large can. It dissolves much more readily than Nature’s First so this is what I use in most of my recipes calling for powdered milk. It doesn’t have a full-cream milky taste, but it does taste like you're drinking milk NOT milk powder.



Eggs


This one is a little bit harder…. I hear many backpackers say they opt to pack in fresh or hard boiled eggs. Personally I wouldn't do it. I don't want to have to worry about spoilage or breakage so, unless it’s the first day out and I want fried eggs on the menu, I go with powdered. There are a couple good powdered options that taste a lot like real eggs.

Ova Easy – Made with just freeze-dried eggs, this one is definitely my first choice when it
comes to powdered eggs. It’s the closest thing I’ve tasted to the real thing – in fact, I recently served these to a friend and they couldn’t tell the difference! Appearance, texture and flavor are just like home cooked scrambled eggs. Although they're good on their own, I really like them with a little freeze-dried cheese tossed in or mixed with dehydrated bell peppers and tomatoes. Yum!


Sonstegard – This is more of an egg-mix than Ova Easy as they’ve had milk, oil and salt added to them. These taste almost as good as the Ova Easy but (maybe due to the add ins?) the texture is a little bit more dense. Still a really good option though and less expensive than OE if you’re on a budget.

Caramel Apples & Snow Toffee

I love caramel apples in the fall – the flavor of caramel just seems to go really well with the season. So, I was really happy when we got in a shipment of caramel pouches perfect for camping!

This caramel goes wonderfully with a slice of dried apple or, if your willing to carry the weight, it’s even better with fresh. It seems like it would also be great in other trailside desserts – drizzled over cookies, mixed into puddings, etc.

One really cool feature about these caramel pouches, is that they’re safe to submerge in boiling water! That means an easy no mess way of creating a hot caramel sauce that would be fantastic on a cold day. If your camping in the snow, I bet this would make great snow toffee… Of course, I’m in Texas, so I can’t say for sure ☺
